COOKING TECHNIQUEs
When i was younger I really like to cook different dishes until I really love it for some unexplained reason. At first I was really scared that I might not be able to achieve my goal or my dream.But as I learned that there are different techniques and the importance of cooking I got the courage on it to keep on going.And now I just want to share what I learned.
WHAT IS COOKING TECHNIQUES?
Cooking techniques are a set of methods and procedures for preparing, cooking and presenting food.Good techniques also take into account economical use of food and cooking fuel resources, as well as food safety.
Cooking methods are the techniques and procedures for cooking, along with preparing and presenting the food.
WHY COOKING TECHNIQUES IMPORTANT
Methods and techniques are ways to understand the use of food and kitchen tools, along with food safety and the cost of food to make that meal. The recipe gives you a simple guideline of ingredients that you will need step by step to make an individual dish. However, a recipe just does not explain or show you the techniques and methods used in preparing the meal, while a cooking technique focusses on how to prepare one of the items in the list of ingredients for the recipe
Cooking methods or techniques in the culinary arts are divided into two categories:
Dry Heat Cooking Methods
In dry heat cooking, heat is transferred to food via air, fat, metal, or radiation. These cooking methods generally use higher temperatures than moist heat cooking methods because air, fat, and metal can be heated to temperatures much higher than the boiling point of water.
Methods use water, liquid or steam to transfer heat to food. Common moist-heat cooking methods include: poaching, simmering, boiling, braising, stewing, pot roasting, steaming and en papillote.
Example BROILING:
INGREDIENts
balsamic vinegar
extra-virgin olive oil
brown sugar
cloves garlic, minced
dried thyme
dried rosemary
chicken breasts
Kosher salt
Freshly ground black pepper
Freshly chopped parsley, for garnish
DIRECTIONS:
In a medium bowl, whisk together balsamic vinegar, olive oil, brown sugar, garlic, and dried herbs, and season generously with salt and pepper. Reserve ¼ cup.
Add chicken to the bowl and toss to combine. Let marinate at least 20 minutes and up to overnight.
Preheat grill to medium high. Add chicken and grill, basting with reserved marinade, until cooked through, 6 minutes per side.
